- Sylvan Eggplant Dice
- Olive oil
- Blue cheese
- Salt and pepper
- Sliced red onions
Preheat vegetable oil to 350˚F.
Fry the Sylvan eggplant dice.
In a bowl, place lettuce, pecans and tangerine.
Add red onions and blue cheese.
Add the fried eggplant dice.
